Rock sugar also known as rock candy is made on a mixture of sugar and water which crystalizes and creates the crystal shapes. Depending on what type of sugar the rock sugar is made from it will have different colors. The yellow are typically made on cane sugar, whereas the white is made on what we mostly know as sugar (white sugar) and the brown rock candy is made on brown sugar.

Different types of rock sugar exists and the most well-known in the Western countries must be its usage in tea, coffee and especially Irish Coffee.
