Braised pork in caramel sauce with boiled eggs and served with rice. A dish that used to be served only for Vietnamese new year but now is a common everyday dish.

Notes

In Vietnam this dish is often made with coconut water as it is cheap and naturally sweet.

Instructions

  1. Cut the meat and put it aside. 
  2. Chop the garlic finely and mix it with fishsauce, garlic powder, onion powder, white pepper and palm sugar until the palm sugar is dissolved. If you are using palm sugar then cut it into smaller pieces to make it dissolve faster. Pour it over the meat and mix well and put it aside for 30 minutes to 1 hour. 
  3. Put oil in a pot and fry the meat. 
  4. Add water, fishsauce, soy sauce/Maggi, rock candy and let it boil up. When it is boiling let it simmer for 1,5 - 2 hours and remember to stir once in a while.
  5. Cut the onion(s) into dices. 
  6. Make the caramel sauce if it hasn't been made already. 
  7. 20 - 30 minutes before serving make the rice and make soft boiled eggs. When the eggs are ready peel them and add them to the pot. The reason why the eggs are soft boiled is to make sure they doesn't get overcooked when added to the pot. The eggs can also be hardboiled but then wait a bit to add the eggs to the pot to avoid overcooking. 
  8. Cut the cucumber and tomato.

Tip

It is possible to use cola with sugar in replacement of the caramel sauce.
